- Preheat your oven to 350°F (175°C) and grease a 9×5 loaf Pan with cooking spray, butter or parchment paper.
- Place the ripened bananas in a mixing bowl and begin to smash the bananas using a fork, leaving a little bit of banana chucks for added texture. (If you are using frozen bananas, allow to sit out of the freezer for 7-10 before trying to smash them)
- Combined Brown Sugar and Butter by adding the room temperature butter to the mashed bananas and stir until well combined. Then, add 1 1/4 cup of brown sugar to the banana-butter mixture and mix until the sugar is fully incorporated.
- Beat the egg then add in the vanilla extract and 1/4 cup of milk to the mixture.
- Mixing the Dry Ingredients – In another bowl, whisk together 2 cups of all-purpose flour, 1/2 teaspoon of baking soda, 1/2 teaspoon of salt, 1 teaspoon of baking powder, and the optional spice (1 teaspoon of ground cinnamon).
