Oh my goodness! Not only do I love eating banana bread, especially when the bread is still warm but the aroma of fresh bake banana bread that flows all through your home just wakes everything up that’s in you! So when this fresh baked good comes out of the oven it make it so very hard not to dive right in and go for what you know.
I have baked this Banana Bread so many times and it never disappoints. When you think of Banana Bread, there are so many favorite additions that you can add to this recipe. Whatever, my tastebuds is calling for I bake. To this recipe there have been times that I have added Walnuts, Chocolate Chips, Pecans and so fourth.
(Tip) However, I suggest that if you have never had banana bread ever in life then you should totally try eating just the banana bread without any other add in. You should enjoy the simplicity of banana bread then work your way up to adding other ingredients. All you have to do is make this recipe with the oatmeal. That’s it!
Muffins or Loaf?
Either way it’s the same recipe and is equally delicious! When I bake banana bread muffins, I usually have in mind of a quick grab and go type of breakfast when you’re heading out the door. With most people, you don’t have time to cook breakfast mornings so this is an easy way to save the time. Just Grab and Go!
This is also perfect for busy moms or just anyone who really do not have the time to give. For me I pick one day out the weekend to prep most of my meals for the week. And these muffins is definitely on my rotation list. Although I wouldn’t mind eating these muffins every day and each week but we all know that’s a no go because it’s all about balance here!
The Perfect Match Up
Ok, so when I’m really in the mood to jazz things up a bit I tend to spread some honey pecan cream cheese on my muffins. Yep. I said it! Cream Cheese Friends! and to make make Banana Oatmeal Breakfast Muffins complete, I love a good cup of hot coffee or maybe some orange juice and some fresh fruit on the side.
Banana Oatmeal Muffins
Equipment
- Muffin Pan
- Hand Mixer
- Silicone Spatula
Ingredients
- 3 to 4 Ripe Bananas
- 1½ cups Flour
- ½ cup Light Brown Sugar
- ½ cup Sugar
- ½ cup Oatmeal
- 1 tsp. Baking Soda
- ½ tsp. Salt
- ½ cup Unsalted Butter (Soften)
- 1 tsp. Vanilla Extract
- 2 Eggs (Room Temperature)
Instructions
- Preheat the oven for 375°. Spray muffin pan with non stick baking spray or line muffin pan with cup cake paper.
- In a medium to large size bowl, add Sugar & Butter and mix until both ingredients are creamed then add in the Vanilla, Egg and the mushed Bananas, mix all ingredients until combined.
- In another bowl, Sift the Flour, Salt and the Baking Soda together.
- Add the Flour mixture alternately to the creamed mixture.
- Add in the oatmeal. and gently fold all ingredients with a silicone spatula. Being very careful not to over mix.
- Using a 3/4 measuring cup, scoop out the batter to fill each muffin cup.
- Bake in the oven for 18-20 minutes or do a toothpick check by sticking a toothpick in the center of the muffin and the toothpick should be clean with nothing on the toothpick.
- Allow to Cool for about 30 minutes.
