Pancakes are one of those meals that people get very excited to have. it’s like having dessert for breakfast and who doesn’t like dessert. I mean really? LOL I know my family tends to indulge in a nice stack of pancakes and there’s no better way to welcome the weekend than with the breakfast of all champions.

What is Oat Flour?
Oat Flour is made from Rolled Oats or Quick Oats that are grounded in a blender or food processor. Oat flour is slightly on the sweeter side but also has a nutty flavor. The best part about oat flour is that it has many nutritional benefits such as high in fiber and providing other nutrients like iron, protein, and B vitamins.

- For the Oats, you can use store-bought Oat Flour or you can make it yourself. It’s super easy. All you have to do is take your oats and blend them in your food processor until it becomes fine in texture like any other flour.
- Remember that you can always use the Milk of your choice. For this recipe, I used Oat Milk.
- To Keep from adding sugar to this recipe, I like to add in a ripe Banana and Honey. Side Note: You can use 2 bananas in this recipe instead of 1. I used 1 banana this time more for added sweetness with a hint of banana to taste.
- When mixing the Oatmeal Pancake Batter, here are a few options that you can do to fit your preference. When mixing pay attention to how thick the batter is. If you want a more loose batter in texture this will make a more thinner Pancake. If the batter is thick it will cook up thick.
- The Berries that are used for the topping are fresh. However, to make the berry syrup, I tend to use frozen. depending on what season we’re in, it can be a challenge getting good berries.
Chocolate Oatmeal Pancakes with Mixed Berry Syrup
Equipment
- Blender used for grinding oatmeal and for syrup (Optional)
Ingredients
Oatmeal Pancake Cake Batter
- 1 ½ cup Oat Flour
- 2 tbsp. Vanilla Extract
- 2 tbsp. Honey optional
- 2 tsp. Baking Powder
- ¼ tsp. Salt
- 1 Banana 2 Bananas Optional
- 2 Eggs
- 2 tbsp. Cacao Powder
- 1 cup Milk
Mixed Berry Syrup
- 1 cup Frozen or Fresh Berries
- ½ cup Water
- ¾ cup Sugar Free Maple Syrup
Instructions
Mixed Berry Syrup
- In a small to medium saucepan add the water and berries. Heat on medium heat. bring to a light boil for 3 minutes.
- Lower the heat. Add the maple syrup and let simmer for 5 minutes.
- Remove from heat. Allow to cool. Note: (For a more smooth texture, place in a food processor and blend until the fruit has completely turned into liquid).
Oatmeal Pancakes
- In a bowl add in all dry ingredients. Oat Flour, Baking Powder, Cacao, and Salt. whisk to combine the ingredients.
- In another bowl add all the wet ingredients. smashed bananas, Eggs, Milk, Vanilla Extract, and Honey. Mix until well combined.
- Add the wet ingredients to the dry bowl and mix but do not over-mix. set aside.
- Heat skillet on medium to high heat. Add butter to coat the skillet. Scoop out the desire amount of pancake batter.
- Cook on both sides for 30 – 40 seconds or until the edges are slightly crispy and repeat. Add Syrup and top with fruit. Enjoy!
