Banana Oatmeal Muffins

Equipment

Ingredients

  • 3 to 4 Ripe Bananas
  • cups Flour
  • ½ cup Light Brown Sugar
  • ½ cup Sugar
  • ½ cup Oatmeal
  • 1 tsp. Baking Soda
  • ½ tsp. Salt
  • ½ cup Unsalted Butter (Soften)
  • 1 tsp. Vanilla Extract
  • 2 Eggs (Room Temperature)

Instructions

  • Preheat the oven for 375°. Spray muffin pan with non stick baking spray or line muffin pan with cup cake paper.
  • In a medium to large size bowl, add Sugar & Butter and mix until both ingredients are creamed then add in the Vanilla, Egg and the mushed Bananas, mix all ingredients until combined.
  • In another bowl, Sift the Flour, Salt and the Baking Soda together.
  • Add the Flour mixture alternately to the creamed mixture.
  • Add in the oatmeal. and gently fold all ingredients with a silicone spatula. Being very careful not to over mix.
  • Using a 3/4 measuring cup, scoop out the batter to fill each muffin cup.
  • Bake in the oven for 18-20 minutes or do a toothpick check by sticking a toothpick in the center of the muffin and the toothpick should be clean with nothing on the toothpick.
  • Allow to Cool for about 30 minutes.
