Delicious Banana Bread made with Fig Walnut Jam

A Banana Bread that's soft and moist on the inside with a nice sugary toasted crumble on top.

Ingredients

  • 3 Large Ripe Bananas
  • 1 Egg
  • cup Brown Sugar
  • 1 stick Unsalted Butter Softened
  • 1 tbsp. Vanilla Extract
  • 1/4 Half n Half
  • 2 cups All Purpose Flour
  • ½ tsp. Baking Soda
  • 1 tsp. Baking Powder
  • ½ tsp. Salt
  • 1 tsp. All Spice
  • 4 tbsp. Fig Jam
  • ¼ cup Walnuts

Instructions

  • Preheat Oven to 350°F. Grease or Spray Loaf Pan.
  • First peel the Bananas. In a medium to large bowl mash up the bananas until the banana's have a smooth texture and set aside.
  • In a large bowl cream together the sugar and soften butter by using a hand mixer or stirring by hand until the butter and sugar is well combined. Then add in the egg, milk and vanilla extract.
  • Next, Add in the mashed bananas and 2 tbsp. Fig jam. Mix well.
  • In another bowl add the Dry Ingredients: All Purpose Flour, Salt, Baking Powder, Baking Soda and All spice. Whisk all together. Then add in the dry ingredients with the wet ingredients. Use the fold in method to combined everything together.
  • Then transfer the batter into the prepared loaf dish. Add the split Banana and Walnuts on top. then bake in the oven for 1 hour or until bread is nice and golden. Or stick a toothpick in the center of the bread and if clean, then it's done.
  • Allow bread to cool for 10-15 minutes. Then remove Bread from Loaf Pan. Cut Slices and Enjoy!
