Start by seasoning your chicken and shrimp with the taco seasoning.
Heat oil in skillet on medium to high heat. Add chicken and cook chicken until well done. add in the onions and peppers to sauteed for 3 to 5 minutes.
Remove Chicken and peppers from skillet and add the shrimp to heated skillet and cook on both sides until shrimp turns pink. Then remove shrimp from skillet and set aside.
Lightly brush oil onto the heated skillet heat the tortilla on both sides for 1 1/2 minutes then the second tortilla add in the cheese, next the chopped chicken, shrimp and veggie mixture. Then top with the other tortilla and carefully flip on the other side.
Using either a pizza cutter or a knife. cut into half twice in opposite directions. you should have 4 triangle shaped quesadillas.
