Ingredients

  • 2 cups All Purpose Flour
  • ½ tsp. Baking Soda
  • 3 Bananas
  • 1 tsp. Baking Powder
  • 1 cup Brown Sugar
  • ½ tsp. Salt
  • 1 tsp. Cinnamon
  • 1 Egg
  • 1 stick Butter
  • 1 tbsp. Vanilla Extract
  • ¼ cup Half n Half

Instructions

  • Preheat the oven to 350°F (175°C) and grease a 9x5 loaf Pan with cooking spray, butter or parchment paper.
  • Place the ripened bananas in a mixing bowl and begin to smash the bananas using a fork,
  • In a bowl combine the brown sugar and butter together and mix until the sugar is fully incorporated. Then add in the mashed bananas, beaten egg, vanilla extract and stir until well combined.
  • In another bowl, whisk together all-purpose flour, baking soda, salt, baking powder, and the optional spice (1 teaspoon of ground cinnamon).
  • Slowly add the dry ingredients to the wet ingredients then mix until all the ingredients are just combined. (Be very careful not to over-mix the batter).
  • Pour the banana bread batter into the prepared loaf pan and place in the preheated oven. Bake for 60 minutes, or until a toothpick or cake tester inserted into the center comes out clean. Once done, remove from the oven and allow to cool before serving.

Notes

*If you are using frozen bananas, allow them to sit out of the freezer for 5-7 before trying to smash them
*Baking time may vary slightly, so start checking at around 50-55 minutes
