Easy One-Pan Lime Chicken and Rice

Ingredients

  • 3 Boneless Skinless Chicken Breast
  • 1 cup Yellow Rice
  • 1/2 can Black Beans
  • 1/2 can Corn
  • 2 cups Chicken Broth
  • 2 Limes For Lime Juice and Garnish
  • ½ Onion Diced
  • 2 Garlic cloves Diced
  • Cilantro
  • 3 tbsp. Olive Oil
  • tsp. Cumin
  • 1 tsp. Smoked Paprika
  • tsp. Chili Powder

Instructions

  • Rinse the chicken. Pat dry and cut them in half, giving you a total of six pieces of chicken. Add olive oil and seasonings. Rub the oil and seasoning into the chicken pieces until fully covered. Set aside.
  • To a mid to large size skillet, drizzle about 3 tbsp. of olive oil and heat oil on medium to high. Add Chicken and cook on each side for 4 minutes. Transfer Chicken from skillet onto a dish.
  • In the same skillet with oil and bits left in the skillet, Add chopped onions, garlic, rice, broth, Chicken, Cilantro, Lime Juice, Corn and Beans.
  • Cover and cook for 25 minutes or until the rice is done and the liquid has cooked out. Remove from heat and garnish with Lime and Cilantro (optional)

Notes

*A reminder that if using chicken broth and saffron rice, both contain sodium if you choose to add salt for taste.
