These Chocolate Oatmeal Pancakes are both Wholesome and Delicious! The flavor combination of the chocolate and the variety of mixed berries delights your taste buds and is a great way to fuel your day.
Blender used for grinding oatmeal and for syrup (Optional)
Ingredients
Oatmeal Pancake Cake Batter
1 ½cupOat Flour
2tbsp.Vanilla Extract
2tbsp.Honey optional
2 tsp.Baking Powder
¼tsp.Salt
1Banana2 Bananas Optional
2Eggs
2tbsp.Cacao Powder
1cupMilk
Mixed Berry Syrup
1 cupFrozen or Fresh Berries
½cupWater
¾cup Sugar Free Maple Syrup
Instructions
Mixed Berry Syrup
In a small to medium saucepan add the water and berries. Heat on medium heat. bring to a light boil for 3 minutes.
Lower the heat. Add the maple syrup and let simmer for 5 minutes.
Remove from heat. Allow to cool. Note: (For a more smooth texture, place in a food processor and blend until the fruit has completely turned into liquid).
Oatmeal Pancakes
In a bowl add in all dry ingredients. Oat Flour, Baking Powder, Cacao, and Salt. whisk to combine the ingredients.
In another bowl add all the wet ingredients. smashed bananas, Eggs, Milk, Vanilla Extract, and Honey. Mix until well combined.
Add the wet ingredients to the dry bowl and mix but do not over-mix. set aside.
Heat skillet on medium to high heat. Add butter to coat the skillet. Scoop out the desire amount of pancake batter.
Cook on both sides for 30 - 40 seconds or until the edges are slightly crispy and repeat. Add Syrup and top with fruit. Enjoy!
