Ingredients
1½lbs.Whole Chicken Wings or Boneless Breast (or any section of the chicken of your choice)
1½cupsButtermilk
2Eggs
2cupsFlour(for breading)
1cupItalian Bread crumbs (for breading)
1tbsp.Creole Seasoning or Seasoned Salt(½ for brining ½for breading)
1tbsp.Chicken Seasoning (½ for brining ½for breading)
1tbsp.Garlic Powder
½tspCayenne (optional)
Vegetable Oil (you can use peanut or canola oil of your choice)
Instructions
Rinse your chicken then pat dry and set aside. Mix all seasonings in a small bowl.
In a medium or large bowl pour in the buttermilk the add the chicken and brine for 6 to 12 hours. This can be placed in your fridge overnight if need be.
In another bowl beat 2 eggs and then add in some of the buttermilk brine. Add chicken and half the seasonings mixture. Give everything a good mix with your hands. (Wear gloves because it gets pretty messy)
Take a large zip lock bag or a container with a tight fitted lid (your choice) and add your flour, the Italian bread crumbs and the rest of the seasonings. Place the floured chicken on a pan to allow the flour to adhere to the chicken.
Heat the cooking oil in your deep fryer. Making sure the oil reaches 350 F. Add in a few pieces of chicken. be sure to not fry too many pieces at one time. cooking time varies depending of the size of the chicken. When your chicken is golden brown and begins to float to the top, your chicken is done.
