Blackened Salmon with Blue Cheese Sauce is flavorful, spicy, and perfectly cooked with a blend of herbs and cajun spices. These Salmon filets are topped with a creamy blue cheese wine sauce that perfectly balances this dish.
There are times when we all go through moments trying to come up with dinner ideas and for whatever reason you’re all planned out. Don’t have a clue of what it is that you have taste for especially when our days become hectic. Lately, I have been going through that phase myself. Which is why I am so grateful for my husband Joe. I recall maybe 5 years ago when Joe offered to cook for me for once (LOL) and he prepared this Spicy Salmon dish from Food Network created by Aaron McCargo Jr. and I have been hooked ever since.
Usually, we have Salmon twice a week because we love it so much. It’s so refreshing when a spouse knows your taste buds and let me tell you, this blackened salmon dish is by far one of my favorite recipes that Joe makes and I can’t get enough of it.
What makes this dish so delicious?
First, if you are a fan of Salmon and you don’t mind it having a little spicy kick to it then this recipe is for you. The combination of the spices on the fish to the rich creamy blue cheese wine sauce use as an extra layer of delicious flavors. I would say that the creator of this recipe is genius!
The flavors definitely play off of one another which gives it a nice flavor balance and I love it!
Modified version from the original recipe
We have tried grilling, baking, and searing in a skillet, experimenting with different cooking methods and ingredients. This recipe has become our favorite and is our go-to when we want to make blackened salmon for dinner. Joe was kind enough to share his modified version of the original recipe.
Ingredients

- 3 Salmon Filets
- Olive Oil infused Garlic
- Butter
- Italian Seasoning
- Fresh Parsley
- Smoked Paprika
- Salt to taste – the original recipe calls for 2 tablespoons of salt, which Joe reduced to a teaspoon for health reasons.
- Cayenne Pepper
- Black Pepper
Blue Cheese Sauce
- Heavy Whipping Cream – the original recipe calls for heavy whipping cream but rest assured that this sauce is as delicious if you use half n half instead.
- White Wine – In this sauce recipe, Joe uses chardonnay for a richer flavor. However, if you prefer a simpler taste without the alcohol being the focal point in the sauce, you can use white cooking wine instead.
- Blue Cheese Crumbles – For the blue cheese brand of choice, I would say that it is totally up to you. I found out that Joe uses the entire 5 oz tub of blue cheese crumble. the original recipe calls for 3/4 cup of blue cheese.

Blackened Salmon Topped with Blue Cheese Sauce
Equipment
- 1 Cast Iron Skillet
Ingredients
Salmon Ingredients
- 3 6 oz. Salmon
- 1 tbsp. Olive Oil
- 1 tbsp. Butter
- 1 tbsp. Italian Seasonings
- ½ tbsp. Fresh Parsley
- 1 clove Garlic
- 1 tbsp. Cayenne Pepper
- 1 tbsp. Smoked Paprika
- Salt & Pepper (For Taste)
Sauce
- 5 oz. Blue Cheese Crumble
- ¼ cup White Wine
- ½ cup Heavy Whipping Cream
Instructions
Blue Cheese Wine Sauce
- In a small sauce pan add in the wine, heavy whipping cream, and blue cheese crumbles. Heat on medium heat for 3- 5 minutes. whisk until the blue cheese has melted. Reduce the heat to low or keep on warm. cover and stir occasionally.
Salmon
- Gather all recipe seasonings cayenne pepper, smoked paprika, Italian seasoning, salt and pepper. add them to a bowl.
- Season both sides of the salmon. make sure both sides are covered with seasonings.
- Heat the olive oil and butter in a skillet on medium to high heat. Then add the fish and cook on both sides to your liking. remove from heat and allow the Salmon to rest for 2 to 4 minutes.
- Plate and top the salmon with the blue cheese sauce. Enjoy!
