This absolutely delicious Chicken and Shrimp Quesadilla is a quick and easy-to-make meal for any weeknight dinner. It includes flavorful chicken and shrimp that are cut into bite-sized pieces. The peppers & onions are sauteed to perfection, which gives a fajita-style taste. And the crispiness of the flour tortilla, along with the gooey melted cheese, brings the whole meal together for one outstanding quesadilla!

I’m not sure who can relate, but I absolutely love a no-fuss meal! Quick and easy recipes are always a win in my home. Spending less time in the kitchen means I can enjoy more time with my family or simply relax.
The best part about this easy recipe is that I can recreate what I would usually order at a restaurant or get for takeout, right in my own kitchen! I understand that we all enjoy dining out now and then. However, I believe having the ability to prepare your meal exactly the way you like it is incredibly valuable.

Let’s Cook
But first, here’s what you’ll need:
- 2 Thin Chicken Breasts
- Raw Shrimp
- 1 Green Bell Pepper
- 1 Red Bell Pepper
- 1 Onion
- 4 Flour Tortilla
- Fiesta Shredded Cheese
- 1 packet of Taco Seasoning Mix
- 1 Lime
- Olive Oil
How to Make Chicken & Shrimp Quesadillas
Chicken

Start by cleaning the chicken with water and lemon or lime. Place chicken in a bowl, adding Olive Oil and Worcestershire sauce. Allow to marinate for 30 minutes. Season Chicken with cumin, chili seasoning, and Mrs. Dash Chicken. Another option is preparing the chicken the night before to marinate overnight in the fridge.
In a skillet, add oil and heat on medium heat, then add the chicken, allowing the chicken to cook on both sides until the chicken is well done throughout. Remove the chicken from the skillet and allow it to rest. The chicken will be so juicy and flavorful.
Shrimp

For this recipe, you can use any size shrimp. I used what I had on hand, which was the large. Make sure the raw shrimp has been peeled and deveined. Season shrimp with the same seasonings, add a little olive oil to the skillet, and sauté until shrimp turn pink. Remove from the skillet and set aside.
Veggies
Chop the Bell peppers and onions into slices. Add the chopped peppers and onions to the bowl with the chicken to be seasoned all together. Then add veggies to the skillet right before the chicken is done

Tortillas
Lightly brush oil onto the heated skillet. Heat the tortilla on both sides for 1 1/2 minutes, then add the cheese to the second tortilla. Next, next the chopped chicken, shrimp, and veggie mixture. Then top with the other tortilla and carefully flip it over.

How to plate it (Style)
Garnishes: Sour Cream, Guacamole, Salsa, and Lime
- First, let’s serve this on a white or neutral plate or platter. We want every food item in the meal to stand out.
- Next, use the mini condiment serving bowls. One for the salsa and one for the sour cream helps keep everything looking nice and gives a restaurant-quality presentation.
- Then layer each quesadilla on top of one another in different angles. Add a little meat mixture on top, along with some onions and peppers. Option: add a lime wedge on the side.
- Lastly, clean up the plate around all the edges and corners.

- Side Shredded Lettuce, diced tomatoes, jalapeños, and red onions.
Chicken & Shrimp Quesadilla
Ingredients
- 2 Thin Chicken Breast
- 4 oz Raw Shrimp
- 1 Green Bell Pepper
- 1 Red Bell Pepper
- 1 Onion
- 4 8" Flour Tortillas
- 2 cups Fiesta Shredded Cheese
- 1 packet Taco Seasoning
- 1 Lime
- Olive Oil
Instructions
- Start by seasoning your chicken and shrimp with the taco seasoning.
- Heat oil in skillet on medium to high heat. Add chicken and cook chicken until well done. add in the onions and peppers to sauteed for 3 to 5 minutes.
- Remove Chicken and peppers from skillet and add the shrimp to heated skillet and cook on both sides until shrimp turns pink. Then remove shrimp from skillet and set aside.
- Lightly brush oil onto the heated skillet heat the tortilla on both sides for 1 1/2 minutes then the second tortilla add in the cheese, next the chopped chicken, shrimp and veggie mixture. Then top with the other tortilla and carefully flip on the other side.
- Using either a pizza cutter or a knife. cut into half twice in opposite directions. you should have 4 triangle shaped quesadillas.
