This Super Easy Chicken and Dumplings recipe is pure comfort in a bowl. It features tender chicken in a rich, creamy broth, complemented by soft, fluffy, buttery dumplings.

I was talking to a good friend of mine, and we had a conversation on the different types of meals that we grew up on. We recalled many comforting meals that our mothers, grandmothers, and aunts used to make, which just warmed our hearts and souls. And one of those meals, of course, is chicken and dumplings.
My grandmother would make this dish, and I remembered it taking way longer due to her making the dumplings from scratch, and back then, she had all the time in the world to do so.

Fast forward, I feel as though the days run into one another, as to why I was all for using the canned biscuits for the dumplings. Oh, wait, it gets even better. I also used store-bought rotisserie chicken for this recipe.
I love making this dish for my family, especially during the fall and winter months, because the season change just calls for it. Even though this is a super easy recipe, this chicken and dumplings is so flavorful and delicious.

How to make Chicken and Dumplings?
1. Prep – Start by shredding the rotisserie chicken and setting it aside in a container or plate. Chopped onions and celery very small. Carrots are optional and can be shredded or cut into 1/2 to an inch thick, whichever you prefer.
2. Heat olive oil in a large pot over medium to high heat. Add all the chopped veggies and sauté for 5 minutes or until the onions are translucent.
3. Add in the shredded chicken, 2 cans of cream of chicken soup, seasonings, 6 cups of chicken broth, and half-and-half. Continue to stir all ingredients together.
4. Reduce heat. Cover with a lid and simmer for 10-15 minutes.
5. Remove the biscuit dough from the can, taking each biscuit and splitting the dough in half. Now you should have 2 round biscuits instead of 1. For example, if you have 8 biscuits, you should end up with 16. Using a knife or pizza cutter, cut the biscuit into four.
6. Once you are done cutting the biscuits, place them into the pot, stirring gently to make sure that the dumplings do not stick together. Cover the pot and allow it to cook for another 10 minutes. Stir and reduce the heat to low or warm. And you’re ready to serve!

Ingredients
- 1 Can Buttermilk Biscuits
- 1 lbs. Shredded Rotisserie Chicken
- 6 cups Chicken Broth
- 2 tsp. Garlic Powder
- 2 tsp. Onion Powder
- 2 Stalks Celery
- 1 Yellow Onion
- 2 cans Cream of Chicken Soup
- ¼ cup Fresh Parsley
- ⅓ cup Carrots (optional)
- 2 tbsp. Olive Oil
- 1 tbsp. Garlic Powder
- Salt and Pepper for Taste
- ½ cup Half n Half
Instructions
- Heat olive oil in a large pot over medium to high heat.
- Add the chopped onions, celery, and carrots at this time and sauté for 5 minutes.
- Add the shredded chicken, cream of chicken soup, seasonings and broth. Stir all ingredients together. Bring to a light boil then reduce heat.
- Add cut biscuits and stir lightly. Cover and allow to simmer for 10-15 minutes or until dumplings has puff out and tender.
