There ‘s nothing like a good breakfast casserole being served in the mornings. It’s one of those comfort dishes so satisfying and quite filling too! Rather you feeding a family of 4 to a family of 8. This is a simple and easy dish to make!
I can’t begin to tell you how many times and how many different variations that I have made this. And somehow every time I switch up a few ingredients, my family and I love each one. What am I saying? Basically, it’s pretty hard to mess this up! LOL
This dish can totally be what you make it! it’s so customizable to your preference. Just remember that the main ingredient is love!
So what’s in it?
Ground Turkey Sausage – But feel free to use Ground Pork Sausage, Diced Ham and/or Bacon!
Potatoes – This is a good one because this is the heart of this recipe. When is comes to potatoes, you can use the frozen potatoes or you can use fresh cut potatoes. Both tastes really good the only real difference here is the frozen, which saves you the time and labor in the kitchen.
Half n Half – For this particular recipe I used Half n Half because that’s what I had on hand at the time. But again, you can use whole milk, or even evaporated milk.
Cheese – Cheese, Cheese and more Cheese please! For some reason I love to mix my cheeses, just to see what flavor of cheese I like the most together. And for this recipe, I used colby and mild cheddar cheese. I love how the colby cheese gives a little tangy but also comes with a little sweet taste as well.

Breakfast Hashbrown & Sausage Casserole
Equipment
- 9×13 Square Casserole dish
Ingredients
- 1½ cup Tatar tots Frozen (thawed)
- 2 cups Shredded frozen (thawed) Hashbrowns
- 1 cup Cheddar Cheese
- 1 cup Colby Cheese
- ⅓ cup Sour Cream
- 1 pound Ground Turkey Sausage
- Salt & Black Pepper
- 6 large Eggs
- 1½ Half n Half
- ½ cup Onions
Instructions
Preheat the oven to 350° F
- Heat Skillet on medium Heat adding the ground sausage and onions. cook until the meat is brown and then drain off any excess liquids.
- Lightly spray Casserole dish with a non stick cooking spray I used olive oil spay and layer bottom with tator tots.
- In a medium size bowl add in the Shredded Hashbrowns, Eggs, Milk, Sour Cream and half of the shredded cheese, Salt & Pepper and whisk all ingredients together.
- Pour the egg mixture over the tator tots and add the other half of the shredded cheese.
- Bake in the oven for 45 mins to 1 hour or until the middle of the casserole has cooked through.
